I-Tal Vegetable Stew

Ingredients

2 large tomatoes, chopped
2 potatoes, cubed
1 sweet potato, cubed
3 carrots, sliced
2 onions, chopped
2 cups of chopped Callaloo or Bok Choy
2 spring onions, chopped
2.5 pints of vegetable stock water
1 teaspoon chopped thyme




Directions

  1. In a large pot, place all of the vegetables, thyme and broth.
  2. Uncovered, cook on high heat until it begins to boil them lower the heat to medium and cook for about 20 minutes or until the potatoes are soft.
