Ingredients
- 1/2 Lb salt codfish
- 1 1/2 Cup of flour
- 1/2 tsp salt
- 2 Large eggs
- 3 tsp of butter, unsalted
- 1 Cup of milk
- 1 hot pepper seeded
- 2 Scallions chopped fine
- 1 crushed garlic clove
- 1 tbs parsley; chopped
- 1/2 tsp thyme
- 1 ground allspice berry
- black pepper to taste
- vegetable oil
Directions
- Soak the salt fish in water overnight to remove the excess salt.
- Melt butter in microwave and let cool. Sift flour into a bowl.
- Beat eggs, add the butter and the eggs to the flour. Add milk gradually, stir, add more milk if batter is too stiff.
- Drain salt fish, boil for 10 minutes in clean water.
- Remove skin and bones. Put fish in a blender, add hot pepper, scallions, garlic, parsley blend together.
- Combine the blended fish with the flour and eggs mixture.
- Add thyme, allspice and black pepper to taste.
- Stir, mix well and let stand for 30 minutes.
- Drop tbsp of the mixture into heated oil in deep fryer until golden brown. Remove excess oil in paper towels, serve hot.
