Ingredients

  • 1/2 Lb salt codfish
  • 1 1/2 Cup of flour
  • 1/2 tsp salt
  • 2 Large eggs
  • 3 tsp of butter, unsalted
  • 1 Cup of milk
  • 1 hot pepper seeded
  • 2 Scallions chopped fine
  • 1 crushed garlic clove
  • 1 tbs parsley; chopped
  • 1/2 tsp thyme
  • 1 ground allspice berry
  • black pepper to taste
  • vegetable oil

Directions

  1. Soak the salt fish in water overnight to remove the excess salt.
  2. Melt butter in microwave and let cool. Sift flour into a bowl.
  3. Beat eggs, add the butter and the eggs to the flour. Add milk gradually, stir, add more milk if batter is too stiff.
  4. Drain salt fish, boil for 10 minutes in clean water.
  5. Remove skin and bones. Put fish in a blender, add hot pepper, scallions, garlic, parsley blend together.
  6. Combine the blended fish with the flour and eggs mixture.
  7. Add thyme, allspice and black pepper to taste.
  8. Stir, mix well and let stand for 30 minutes.
  9. Drop tbsp of the mixture into heated oil in deep fryer until golden brown. Remove excess oil in paper towels, serve hot.
