Ingredients

  • 2 cups uncooked white rice
  • 2 cup of low sodium broth
  • 1 Can of onion soup
  • 2 Slices of bacon, cut in small pieces
  • 1 can of beer
  • 1 large white Onion sliced
  • Salt to taste
  • 2 tsp of butter
  • 1 cup Spanish red peppers (pimientos morrones)
  • 1 cup sweet Peas (or Peas and carrots)

Directions

  1. Cook rice in a deep pot with the broth & the onion soup.
  2. On a separate pan fry the bacon over medium heat stir to keep it from sticking. Add the bacon & the beer to the cooked rice.
  3. Use a ladle to fold the rice & the bacon so the bottom of the rice lies on top.
  4. Saute the onion & the red pepper in the butter. Place half of the onion, red pepper & sweet peas on top of the rice, fold gently.
  5. Reduce heat to low, cover the rice & cook for 15 minutes.
  6. When rice is cooked, decorate with the othe half of the onion, red pepper & sweet peas.
