Ingredients

  • 1 lb boiled blackeye Beans, cooked
  • 1 lb canned red kidney beans, drained
  • 1 lb canned wax beans, drained
  • 1 lb boiled soy Beans, drained
  • 1 medium green pepper, chopped
  • 1 Medium red sweet pepper
  • 1 Large red Onion, thinly sliced
  • 1 cup Sugar
  • 1 cup vinegar
  • 2 tbsp chopped parsley
  • 1/2 cup Olive oil
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • 1/2 tsp dried tarragon leaves finely chopped
  • 1/2 tsp dried basil leaves finely chopped

Directions

  1. In a large bowl, combine all the beans, green and red peppers and onion.
  2. In a separate bowl, prepare the dressing.
  3. Mix together sugar, vinegar, mustard, parsley, tarragon, basil, salt and olive oil.
  4. Pour the dressing mixture over the vegetable and stir .Cover, stir occasionally while being chilled and serve.
