Ingredients
- 1 lb boiled blackeye Beans, cooked
- 1 lb canned red kidney beans, drained
- 1 lb canned wax beans, drained
- 1 lb boiled soy Beans, drained
- 1 medium green pepper, chopped
- 1 Medium red sweet pepper
- 1 Large red Onion, thinly sliced
- 1 cup Sugar
- 1 cup vinegar
- 2 tbsp chopped parsley
- 1/2 cup Olive oil
- 1 tsp salt
- 1/2 tsp dry mustard
- 1/2 tsp dried tarragon leaves finely chopped
- 1/2 tsp dried basil leaves finely chopped
Directions
- In a large bowl, combine all the beans, green and red peppers and onion.
- In a separate bowl, prepare the dressing.
- Mix together sugar, vinegar, mustard, parsley, tarragon, basil, salt and olive oil.
- Pour the dressing mixture over the vegetable and stir .Cover, stir occasionally while being chilled and serve.
