Baked Fish Souffle PDF Print E-mail

Ingredients

  • 1 lb of cooked fish
  • 2 Tbsp. of margarine
  • 1 Cup flour
  • 1/2 Pint milk
  • 1 Tsp chopped thyme and celery
  • 1/2 Tsp lime juice
  • 2 Eggs, separated

Directions

  1. Chop the fish finely
  2. Melt margarine in microwave. Mix the flour, melted margarine, milk, stir and boil for 3 minutes.
  3. Combine the fish, lime juice chopped thyme and celery, and add to the flour mixture.
  4. Add the eggs yolks one at a time. Beat the eggs white and fold gently in the mixture.
  5. Pour into a greased pyrex dish.
  6. Bake at 425 degree for 25-30 minutes of until brown and well risen. Serve immediately.
