Ingredients

  • 2 1/2 lbs lean pork loin chops
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 2 cups mixed vegetables
  • 1 Large red pepper, sliced
  • 1 Large green pepper, sliced
  • 2 cup s mushrooms, sliced
  • 1 cup water 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 2 tsp cornstarch
  • 1 tsp ground ginger
  • 1/2 lb Cherry tomatoes
  • Cooked rice

Directions

  1. Trim excess fat and bone from pork and discard.
  2. Cut in diagonal slices1/4 inch thick
  3. In a large skillet brown meat in hot oil, stirring constantly. Remove from pan. Sprinkle salt over pork. Add vegetables and 1/2 cup water, stir, cover & cook for 10 minutes at medium heat.
  4. Combine soy sauce, 1/2 cup of water,ginger, garlic powder, cornstarch Add to vegetable mixture. Return pork to pan and cook 5 minutes, stirring occasionally.
  5. Cut tomatoes into quarters. Stir into pork mixture for 3-4 minutes and heat thoroughly.
  6. Serve over cooked rice.
