Ingredients
- 2 1/2 lbs lean pork loin chops
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 2 cups mixed vegetables
- 1 Large red pepper, sliced
- 1 Large green pepper, sliced
- 2 cup s mushrooms, sliced
- 1 cup water 2 tbsp soy sauce
- 1 tsp garlic powder
- 2 tsp cornstarch
- 1 tsp ground ginger
- 1/2 lb Cherry tomatoes
- Cooked rice
Directions
- Trim excess fat and bone from pork and discard.
- Cut in diagonal slices1/4 inch thick
- In a large skillet brown meat in hot oil, stirring constantly. Remove from pan. Sprinkle salt over pork. Add vegetables and 1/2 cup water, stir, cover & cook for 10 minutes at medium heat.
- Combine soy sauce, 1/2 cup of water,ginger, garlic powder, cornstarch Add to vegetable mixture. Return pork to pan and cook 5 minutes, stirring occasionally.
- Cut tomatoes into quarters. Stir into pork mixture for 3-4 minutes and heat thoroughly.
- Serve over cooked rice.
