Ingredients

  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 2 Eggs well beaten
  • 1/2 cup carrot, grated
  • 1 cup cheese, grated
  • 1/4 cup onion, chopped
  • 2 tsp Worcestershire sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper salt to taste
  • 1/2 cup ketchup

Directions

  1. Preheat oven to 375ºF.
  2. In a large bowl combine ground beef, rice, egg, carrot, 1/2 cup cheese, onion, and seasonings.
  3. Mix well. Place the mixture in a loaf pan, top with 1/2 cup tomato sauce, cover with foil, and bake at 375ºF for 1 1/2hours or until meat thermometer reads 160ºF in center of loaf.
  4. Remove from oven.
  5. Pour off excess juice,top with the remaining cheese and the ketchup & bake for 15 more minutes, uncovered.
