Chicken Pineapple Stir Fry |

Ingredients
- 1 cup cooked chicken
- 1 tbsp corn starch
- 1 tbsp soy sauce
- 1 cup pineapple chunks, drained (reserve ? cup juice)
- 2 tbsp vegetable oil
- 1 cup fresh green beans
- 1 cup raw carrots, chopped
- 1 Large green pepper cut into strips
- 1 Large red pepper cut into strips
- 2 Cloves of minced garlic
- 4 cup s of cooked white rice
- Salt and pepper to taste
Directions
- In a small bowl dissolve cornstarch in soy sauce and pineapple juice.
- Heat vegetable oil in skillet, add minced garlic.
- Stir-fry vegetables until tender but still crisp. Sprinkle the Salt and pepper over the vegetables add the pineapple and chicken.
- Stir in cornstarch mixture and cook until thickened. Serve over white rice
