Chicken Pineapple Stir Fry PDF Print E-mail

Ingredients

  • 1 cup cooked chicken
  • 1 tbsp corn starch
  • 1 tbsp soy sauce
  • 1 cup pineapple chunks, drained (reserve ? cup juice)
  • 2 tbsp vegetable oil
  • 1 cup fresh green beans
  • 1 cup raw carrots, chopped
  • 1 Large green pepper cut into strips
  • 1 Large red pepper cut into strips
  • 2 Cloves of minced garlic
  • 4 cup s of cooked white rice
  • Salt and pepper to taste

Directions

  1. In a small bowl dissolve cornstarch in soy sauce and pineapple juice.
  2. Heat vegetable oil in skillet, add minced garlic.
  3. Stir-fry vegetables until tender but still crisp. Sprinkle the Salt and pepper over the vegetables add the pineapple and chicken.
  4. Stir in cornstarch mixture and cook until thickened. Serve over white rice
