Beef Chili Cheddar Topped Potatoes |

Ingredients
- 4 Medium baking potatoes
- 1-1/2 Pounds ground beef
- 2 Teaspoon of vegetable oil
- 1 Tablespoon chili powder
- 1/2 teaspoon salt
- 1 Can hot chili beans, undrained
- 2 Cups shredded mild Cheddar cheese
- Salt and pepper
- 1 Large sliced green onions
Directions
- Pierce potatoes in several places.
- Microwave for 15 or until tender, let stand for 5 minutes
- In a large skillet pour the oil, brown the ground beef over medium heat for 10 minutes
- Add the chili powder, 1/2 teaspoon of salt, beans, 1 cup of cheese
- Stir, cook until heated through.
- Cut the potatoes lengthwise season with salt & pepper (Optional)
- Spoon beef mixture evenly over potatoes; sprinkle with green onions and 1/2 cup cheese.
