Beef Chili Cheddar Topped Potatoes PDF Print E-mail

Ingredients

  • 4 Medium baking potatoes
  • 1-1/2 Pounds ground beef
  • 2 Teaspoon of vegetable oil
  • 1 Tablespoon chili powder
  • 1/2 teaspoon salt
  • 1 Can hot chili beans, undrained
  • 2 Cups shredded mild Cheddar cheese
  • Salt and pepper
  • 1 Large sliced green onions

Directions

  1. Pierce potatoes in several places.
  2. Microwave for 15 or until tender, let stand for 5 minutes
  3. In a large skillet pour the oil, brown the ground beef over medium heat for 10 minutes
  4. Add the chili powder, 1/2 teaspoon of salt, beans, 1 cup of cheese
  5. Stir, cook until heated through.
  6. Cut the potatoes lengthwise season with salt & pepper (Optional)
  7. Spoon beef mixture evenly over potatoes; sprinkle with green onions and 1/2 cup cheese.
