- 1 lb fillet of fresh red snapper
- 2 green peppers, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 onion, chopped
- 1 scotch bonnet pepper
- Salt and pepper to taste
- Cut red snapper fillets into 1 inch cubes. In a large frying pan, combine olive oil, garlic, green pepper, and onion. Sauté for 5-8 minutes over a medium hot flame.
- Add scotch bonnet into sizzling pan then add red snapper to mixture, and stir until coated well.
- Sprinkle salt and pepper, cover and cook for approximately 5 minutes. Stir and cook for another 5 minutes.
