Roast Pork (Lechon Asado) PDF Print E-mail

Ingredients

  • 3 lbs pork roast
  • 1/4 tsp bay parsley
  • 1/4 tsp oregano
  • 1/4 tsp cumin
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 2 minced cloves garlic
  • 1 sliced green pepper
  • 1 sliced onion
  • salt and black pepper to taste

Directions

  1. Use a sharp knife to remove excess fat and skin from pork roast.
  2. Marinate with spices, pierce holes in meat, and set aside for 2hrs.
  3. Roast at 350F for 2 1/2to 3 hrs.
  4. Turn the meat and baste frequently.
