Bean Soup (Guiso de Garbanzos) PDF Print E-mail

Ingredients

  • 1 cup chick peas
  • 1 1/4 cup sausages
  • 4 cups water
  • 1 smoked ham hock
  • 3 minced garlic cloves
  • 3 tbsp tomato sauce
  • 1 tbsp green pepper
  • 1/2 tsp vinegar
  • 1 medium chopped onion
  • 1/2 cup tomato sauce
  • 1/2 tsp oregano
  • 1 cup squash
  • 1/3 head cabbage
  • salt to taste
  • 2 tbsp olive oil
  • 1 potato chopped and peeled

Directions

  1. Boil all ingredients except squash, cabbage,and potato in large stockpot.
  2. When peas are tender (about 2hrs) add remaining ingredients and cook until soft.
