Ingredients
- 2 lbs boneless grouper
- 1 medium onion, chopped
- 2 ribs celery, chopped
- 1 medium bell pepper, minced
- 2 medium chopped potatoes
- 4 cups diced tomatoes
- 5 cups fish stock
- 1/2 tsp thyme
- 1/2 tsp allspice
- 2 Scotch Bonnet pepper
- 1 bay leaf
- 1 tbsp lime juice
- salt and pepper to taste
- 1 tbsp seasoning salt
Directions
- Dice the fish into approximately 1/2 inch pieces and place in mixing bowl.
- Bring fish stock to a boil in a large pot.Marinate with lime and spices and place in fridge for 2-3 hrs.
- Add the rest of the ingredients and simmer for 1 hr, stirring occasionally.
